WELLY REVIVED

The Wellington Hotel in Seaford shut its doors for some three weeks last month, when the tenant threw in the keys, leaving the owner, brewing and pubs group Greene King, looking for a solution.


While Welly regulars drifted between other bars in the town, Greene King contacted Matthew Short, who operates other Greene King Premises in the Brighton area, to see if he could piece together a team and a business plan.

Matt contacted Faye Ball, (pictured above chatting to a customer), who had worked at the Welly in a number of capacities for some three years.

Fay takes up the story: "I was gutted when the Wellington closed as I have enjoyed three good years working here in a number of different roles.

"I also have a real love for the place and the customers and so I was delighted when Matt asked me if I would be interested in managing the business under his direction.

"I talked it through with my partner, Shane Smith, and we decided to go for it. We have moved from Denton to the Wellington and Shane has handed in his notice so he can join me full time in running the business.

"We have had to change a few things to get the business up and running and we have been happy to see a large number of the regulars returning.

"On the beer side, we have kept Long Man Best as our regular bitter and will maintain a changing menu of ten real ales, plus our popular lagers and, of course, Guinness.

"The wine menu has been expanded and we have a varied list of reds, whites and sparkling wines to choose from.

"The single malt whisky choice has always been a strong point here and we will continue to include the popular brands, plus a few different options from around the world.

"One area we will be expanding on in line with the current trend is the gin selection, and we can promise a few surprises here.

"We have a new basic food menu to get started, with popular pub dishes at fair prices and a kiddies menu as well. We will be developing the food side as we progress and we have a few ideas on how the menu will expand.

"We also now have Sky Sports, a dartboard with growing support for a darts team, and a pool table is going into the previously under-used restaurant area.

"I really want the Wellington to become a community hub and a meeting place for all sorts of activities and interests."
